Zingerman's Baking and Cooking Classes in Ann Arbor

BAKE! is Zingerman's hands-on teaching bakery in Ann Arbor, MI, tucked between Zingerman's Bakehouse and Zingerman's Creamery.

We offer dozens of different bread, pastry, and cake hands-on baking classes and cooking classes both in our teaching kitchens and online for virtual classes. We also offer the ability to customize your experience with private classes, both in-person or virtual.

All of us at Zingerman's Bakehouse know the joy and excitement of baking something really good and sharing it with friends when it's hot out of the oven. Our baking and cooking classes will leave you with that same joy, the food you made, and the inspiration and skills to continue your baking journey.

Our in-person classes (except for family classes & kids camps) are designed for adults aged 17 and up. Virtual classes (except for virtual kids classes) are designed for adults as well, however, households are welcome to participate together, so kids can join in the fun, too.

We want to encourage a love of cooking and baking early, so we also offer a variety of classes designed for kids that include multi-day camps for kids and teens, and more. Head to the kids’ classes and private classes pages for more information.

Danish: The Breakfast of Vikings

Sail ashore and conquer the mysterious and rich world of Danish dough. In this hands-on class, we'll teach you the techniques for creating rich, butter-laminated (layering the dough with butter and folding it over) and yeasted Danish dough. You'll get plenty of hands-on practice in class mixing, kneading, laminating, hand-shaping, and proofing yeasted dough. Together, with our rich laminated dough, we'll create 18 hand-shaped Danish (almond-filled bear claws, pinwheels, and pockets filled with cream cheese or fruit). 

You'll leave the BAKE! class with our recipes, the knowledge to recreate them at home, and all the Danish you made in class.

In-Person: We'll end the class with a tasting and you'll leave with Danish dough to bake with at home later, as well as some great coupons. You may want to bring a cooler and ice pack to class with you for storing your bake-at-home sweet dough on the ride home if you are traveling more than an hour to attend.

Virtual (2-day): On Day One, we'll make the laminated dough and go over all your options for topping/filling your 18 Danish. On Day Two, we'll shape, proof, fill/top, and bake all your Danish.

Nuts about Pistachios

Nut-Lovers rejoice! We’re throwing an oh-so-tasty Pistachio party and you’re invited! Join us for this nut-filled, hands-on celebration where pistachios take a nutty star turn in three scrumptious recipes. First, we’ll teach you how to rustle up our New Deli Crumb Cake, a former member of the Bakehouse’s coffee cake repertoire. It’s a fun twist on a classic American crumb cake that's imbued with the flavors of Indiaexotic spices, coconut, and crunchy pistachioshence the name “New Deli” (Delhi, get it?). Next up, we’ll make elegant Pistachio Cherry Slims, a bake-and-slice cookie where the pure taste and brilliant color of pistachios shine, paired with tart cherry preserves.  This cookie bar first made its appearance as a Fancy Schmancy Holiday Cookie in 2017! Plus, we’ll make a Pistachio Lemon Biscotti, the perfect accompaniment to a cup of coffee or tea!

 

You'll leave the BAKE! class with our recipes, the knowledge to recreate them at home, and the New Deli crumb cake, Pistachio slims, and Pistachio Lemon Biscotti you made in class.

Who You Calling a Cream Puff?

Ever wonder how to make those tender hollow little cream puff shells? Well, join us to find out in this hands-on class! We'll share the history and teach you the basic techniques of creating sweet and savory pastries from Pâte à Choux (pronounced, pot-a-shoo) dough. You'll make your own Craquelin-topped Cream Puffs, along with our Vanilla Bean Pastry Cream to fill them, and savory cheese Gougères. These recipes will kick your entertaining up several notches.

You'll leave the BAKE! class with our recipes, the knowledge to recreate them at home, and everything you made in class, including cream puffs, pastry cream, and savory gougères.

In-Person: We'll end class with a tasting of what we made and you'll also leave with some great coupons.

Dinner Series: More Cheese Please!

Is “More Cheese Please!” a ready refrain of yours when getting fired up to bake? Do sweet and savory baked treats oozing with cheesy deliciousness trigger feelings of euphoria, make you happy, lighten your mood as only cheese can do? (Recent scientific research has found that cheese does indeed have the power to make us feel good!) If so, then this hands-on class is for you! 

We’ll teach you how to make three tasty recipes where cheese reigns supreme: Cheesy Pepper Crackers to pair with your favorite cheese and charcuterie board; the Bakehouse’s Cornish-style Cheese and Caramelized Onion Pasty with a flaky all-butter crust for a handy supper; and for dessert or afternoon tea, a rich Raspberry Ricotta Cake. Along the way you’ll learn a variety of techniques and get plenty of hands-on practice mixing, rolling, and baking up your cheesy creations.

You’ll leave the BAKE! class with our recipes, the knowledge to recreate them at home, and dinner for four, including 3 dozen crackers, 4 pasties, and a 9-inch cake.

German Breads

While working with Eli and Tino of Dresdner Backhaus, a famous bakery in Dresden, Germany, we exchanged recipes and experience freely. Join us for this hands-on class as we make three of the breads our German friends taught us: the Bakehouse's Dinkelbrot, a spelt, rye, and sunflower seed loaf; Wurzelbrot, a rye and wheat baguette; and Vinschgauer, a savory, seasoned mountain roll that's delicious with ham and cheese. You'll get plenty of hands-on practice mixing, shaping, and proofing a variety of yeasted bread doughs, and then bake them to perfection.

You'll leave the BAKE! class with our recipes, the knowledge to recreate them at home, and all the German breads you made in class.

In-Person: We'll end class with a tasting and you'll also leave with some great coupons.

Virtual (2 Day): On Day One, we'll meet to mix our rye sour, make our soakers, and mix our poolish. On Day Two, we'll be mixing our doughs, and then shaping, proofing, and baking our 3 German Breads. To make the Wurzelbrot, you'll need a stand mixer with a hook attachment.
