BAKE!-cation Weekend: Bread 3.0

In this action packed weekend of bread baking you'll make a griddle flatbread called m'smen, banana quick bread, yeasted sesame semolina with golden raisins and fennel, whole wheat baguettes, crispy breadsticks, pretzel buns for sandwiches, versatile brioche, classic onion rye, spicy chile cheddar and savory potato dill bread. We'll cover numerous bread making techniques including yeasted breads, starters, fermenting and proofing doughs, baking a great crust and more. We'll show you a jaw-dropping world of amazing breads that you really can bake at home! Your BAKE!-cation includes breakfast and lunch each day.

Our BAKE!-cations® are so popular guests like to return year after year, so we’ve created a brand new version of our pastry baking weekend. This weekend will cover a variety of techniques such as crimping pie dough, par-baking, creaming method, kneading, cooking custard, filling a cake and more. You’ll learn while creating this great collection of recipes: Quiche Lorraine, Puff Pastry, Palmiers, Pecan Blondies, Whoopie Pies, Cream Cheese and Apricot Strudel, Cheddar Bacon Scallion Scones, Triple Trouble Chocolate Cookies, New Deli Crumb Cake, Fruit Tarts, and Black Forest Torte. You’ll learn a wide variety of techniques including making bread starters and poolish, forming a flaky pie crust, frying, dough fermentation, cooking pastry cream, kneading dough, and more. Together we’ll make a laundry list of all time favorites including Maple Sandwich Cookies, Ginger Jump Up cookies, Bacon Pecan Sandies, Buenos Aires Brownies, Crullers, Rhubarb Pie, Coconut Cream Pie, Boston Cream Pie, Somodi Kálacs, Peppered Bacon Bread, Scallion Walnut Bread, Chocolate Sourdough Bread, Brioche Buns, Focaccia with Caramelized Onions, Walnuts and Gorgonzola, and French Baguettes.
